The word “A2 ghee” refers to the original desi cow ghee, which is made from milk from desi cow breeds like Gir and Sahiwal. They receive natural nutrients and are mostly fed grass. These cows produce as much milk as their daily natural production potential of 7 to 10 liters.
The superior milk protein is A2. The two types of beta-casein that may be detected in milk are A1 and A2. A2 beta-casein is only produced by desi cows or non-mutated cows. In order to produce more A1 and A2 beta-casein, cows underwent mutation. For us, milk protein type A2 is considerably better than type A1.
Traditional Bilona Method
Traditional Bilona Ghee is created by using a wooden or aluminum beater to extract butter from the curd known as Bilona, which is then cooked over a low heat to create ghee. The safest and oldest method is this one.
